Juan Diego Villegas is a master’s student in the Department of Food Science and Technology at the University of Nebraska-Lincoln, advised by Dr. Jayne Stratton. His research focuses on developing safe recipes for home canning applications with aronia berries as the primary ingredient. Thermal lethality studies are fundamental to ensure the secure processing of foods at home. He was additionally ensuring the retention of the nutritional value of the aronia so households could enjoy a safe and healthy product. Juan received his bachelor’s degree in chemical engineering from the University of La Sabana, Colombia, in 2020.
