Aryany Peña Gomez is a master's student in the Department of Food Science and Technology at the University of Nebraska-Lincoln, advised by Dr. Andreia Bianchini. Her research centers on the distribution
of E. coli among milling fractions and equipment during wheat milling. Additionally, she is evaluating the survival of E. coli O121 in wheat flour, buckwheat flour, and cake mix during long-term storage.
Aryany holds a bachelor's degree in Food Science and Technology from the Panamerican Agricultural School, Zamorano, in Honduras. She has over four years of professional experience in food safety and quality assurance.
