Hello All,
I wanted to share the sad news that Andy Benson has recently experience the loss of his father. This is an incredibly difficult time for him and his family, and I know we all share in sending our deepest condolences.
Please keep Andy in your thoughts. Services are this Friday, July 18th at Roper and Sons at 4300 O St. Lincoln, NE 68510.
Visitation is at 10am and the funeral service is at 11am.
Let's be mindful and supportive as he takes the time he needs to grieve and heal.

Hi all,
It is with mixed feelings that I must announce that Byron Chaves will be leaving the Department early next year. He has recently accepted a position at Rutgers University. We are sad to see him go and he will be certainly missed here at UNL, but we are happy for this new opportunity, and we look forward to witnessing the wonderful things that he will do in his new position.
Byron will work with his students and faculty to ensure completion of projects, and he will work on continuity plans for his graduate students, who will be staying at UNL. We will work together to ensure a smooth transition of his research, extension, and teaching programs.
Please help me congratulate Byron on this big step and wishing him all the best in this new adventure.
Congrats Byron! We are proud of you!

"Egg White Hydrolysate in Hypertension: A Mechanistic Investigation of Gut Microbiota-Dependent and -Independent Pathways"
Originally from Honduras, Emerson obtained his bachelor's degree from Zamorano University and his master’s degree in food science and technology from the University of Nebraska-Lincoln (UNL). He gained two years of experience as a production supervisor in a Honduran palm oil refinery, aimed at extracting bioactive compounds from palm oil, sparking his interest in the direct impact of food components on human health. This experience led him to transition to academia, where he researched the health benefits of bioactive compounds derived from whole foods. His doctoral research evaluates the anti-hypertensive activity of egg white hydrolysate, the impact of its digestion-resistant protein on the gut microbiome, and its subsequent effects in hypertension. Emerson is currently a Ph.D. Candidate in the Department of Food Science and Technology at UNL.

“Modeling the Survival of Salmonella in Beef Jerky: Influence of Product Thickness and Temperature on Dehydration Rate and Microbial Inactivation”
Kassim Sulleyman is a graduate student currently pursuing a Master of Science degree in Animal Science with an emphasis on Meat Science and Muscle Biology at the University of Nebraska–Lincoln under the supervision of Dr. Byron D. Chaves. His research focuses on evaluating the survival of Salmonella in beef jerky, specifically examining the effects of slice thickness, drying temperature, and post-drying storage. Kassim’s work integrates microbial challenge studies and predictive modeling to support the development of safer, shelf-stable meat products. He holds a Bachelor's degree (Agriculture Technology) and an MPhil Animal Science from the University for Development Studies-Ghana.
